Almond cake with its soft, nutty flavor and sweet almond aroma, Tarta de Santiago is a truly delicious treat that melts in your mouth.
What is Tarta de santiago:
It is traditional cake and it is very important for Spanish people according to there history and there religion.The speciality of this cake is that it is totally gluten free and made with natural ingredients and that,s why it has a long shelf life. People of Spain eat this and made this at there special occasions for the memories of history and there religion.But like other incredible dishes Tarta de santiago also become famous worldwide because of its different flavours.

I am making one cake of about 7 to 8 inches.You can also use almond powder but to enhance its flavours i am using almond meal for its making. Thanks to internet food bloggers Tarta de santiago is now not a local dish it become famous,and chefs are including in there menus.
Things you need:
- 3 eggs at room temperature
- 150 grams of sugar
- 150 grams of almond meal
- 1 lemon zest
- half orange zest
- 1/2 teaspoon cinnamon powder
- a pinch of salt
- 1/4 teaspoon of almond essence
- icing sugar for dust
How to make it:
for batter:
Take a bowl add in your room temperature eggs, and sugar i am using a hand beater we just want soft peaks beat the eggs for some minutes until creamy and soft peaks.Now rest of the ingredients almond meal,salt,both zest ,cinnamon powder and the essence is optional. Now dont use the beater simply apply cut and fold process use a spatula and mix dont mix harshly we need the air bubbles in it.

Baking:
Pre heat your oven at 180 C , take the baking pan and grease it properly add in your mixture and bake it for 35 to 40 minutes until golden brown.And also use the toothpick test for confirmation that its done.
Garnishing:
Take a sifter and dust icing sugar on it. So traditionally it is eaten as it is but if you want you can eat it with honey,whipped cream, vanilla ice cream,Berry sauce and also with Greek yogurt.Here i am using honey and orange syrup very easy to make add your honey and some orange juice in saucepan and ccok until thicken and that,s it will double the flavours of your desert.
