Spaghetti alla Mediterranea

Sometimes the best pasta dishes come from the simplest ingredients, and this one is a perfect example. This anchovy, tomato, and olive pasta has become one of my go-to meals when I want something quick, flavorful, and a little different. The anchovies melt into the sauce, giving it a rich, savory depth, while the tomatoes and olives add brightness and a bit of tang. Ingredients:

  • Spaghetti – Half pack
  • Olives – 1 cup
  • Cherry Tomatoes – 1 cup, halved
  • Garlic – 4 to 5 cloves, finely chopped
  • Olive Oil – 2 to 3 tbsp
  • Dried Chilli Flakes – 1 tsp
  • Tomato Paste – 1 tbsp
  • Water – As required for sauce consistency
  • Anchovies – ½ cup, finely chopped
  • Parsley – A handful, chopped (for garnish)
  • Capers – 2 tbsp, chopped
  • Parmesan Cheese – To taste, grated (for garnish)

Anchovies

Anchovies might be small, but they’re packed with flavor. These little fish bring a salty, savory kick that adds incredible depth to sauces and dishes. When cooked into pasta, they dissolve right into the sauce, giving it that rich, umami taste without leaving behind chunks of fish. Method :

First, you have to boil the spaghetti in hot water with salt. After that, cut all the veggies like parsley and cherry tomatoes in half. Also, cut the capers and olives the same way. Now, chop the garlic and set it aside.

Take a pan, add olive oil and garlic to it. After a little sauté, add chilli flakes. Now add the tomato paste and cook. To make it glazy, add a little amount of pasta water or simple water to it.

Now add olives, capers, and tomatoes to it and cook well. Then add the boiled spaghetti and stir. Add chopped parsley and turn off the flame.

Put a graceful amount of Parmesan on it, shift it to your platter, and enjoy!
