One-Pot Jollof Rice – Quick & Easy Dinner Idea

Introduction:

What are jallof rice basically? Jallof rice is a perfect warm one pot rice dish cooked in the perfect red sauce of tomatoes and smoky flavours of paprika,with some spices.It is traditional Nigerian dish,every country and cultures contain its unique taste and flavours and this divine dish is famous in many Nigerian countries,it is a perfect comforting food for all my Nigerian fellows.If you are a rice lover then i will recommend you to make and discover more magic of rice dishes and Jallof,s spicy and overwhelming flavours.

So jallof rice are basically only rice with no protein in there cooking. People eat them with fish and chicken cooked seprately. Just like we made herbs rice garlic butter rice and eat them with cooked chicken and fish dishes, Jallof rice also consumed in this way mostly but you can also enjoy rice they are also full of taste and very warm satisfying food.

Things we need:

  • one red onion for grind and one small (sliced)
  • one red bell pepper
  • 2 tomatoes( big size)
  • habanero peppers 1 to 2
  • 2 garlic cloves
  • 4 tablespoon of oil (any cooking oil )
  • salt
  • 1 and 1/2 teaspoon of chicken powder
  • 1 teaspoon of curry powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ginger powder
  • salt to taste
  • 1 teaspoon of thyme
  • 1 teaspoon of all purpose seasoning
  • 2 cups long grain rice
  • 3.5 cups of water
  • basil leafs for garnish

Let,s make a dish of warm rice:

Preparations :

As Jallof rice is a one pot dish so we will make it by doing all preparations first.Okay guys take out your cutting board cut roughly red bellpepper,2 tomatoes, red onion and habanero spice and 2 garlic cloves. Take a blender add all of them in it add some home made or store bought chicken stock and blend.and set aside the sauce. Cut red onion sliced for the cooking time and take 2 cups of rice and wash them properly leave them in water for 20 minutes and set aside.Also prepare the garnish like basil leaves and parsley if you want.

Stove cooking:

Take a pot add cooking oil in it i am using olive oil about 4 to 5 tablespoon add your red onion and cook until translucent add tomato paste about 4 tablespoon in them cook for 2 to 3 minutes .Now add in your prepared sauce, and cook for 8 minutes you have to get rid of the raw tomato flavour.Add 2 bay leafs in this also take your spoon and add 1 teaspoon curry powder,1 teaspoon garlic powder , 1 teaspoon ginger powder salt according to taste and dried or fresh thyme 1 teaspoon also take 1 teaspoon of all purpose seasoning powder and chicken powder and add in and mix.

Final step:

Add 3.5 cups of water in it and taste the salt the salt must be high to cook the rice with perfect salt.Add in your soaked rice and cook for 20 to 25 minutes with a foil and cover in it. And here its done plate it out add any type of garnish you want like basil leafs parsley etc and enjoy you can eat it with any type of gravy chicken dish or with fish and chicken cooked or steamed.Enjoy it with your family and give me remarks for it.
