What is a Japanese Unadon bowl:

Unagi don also called as Unadon is a traditional Japanese rice bowl.This bowl is a sign of perfection as you know I love to explore traditional dishes so unadon also makes me out of words , if you are a seafood lover then this refreshing sweet and savoury bowl of rice will give you a complete and exceptional experience.It is filled with umami flavour ,it is usualy served on a bed of warm sticky Japanese rice with a sprinkle of sansho spice on it a very rich Japanese spice.

This dish is especially popular in the summer in Japan because eel is believed to give you strength and energy. The eel is first grilled, then steamed (in some regions), and finally grilled again with sauce, making it soft on the inside and slightly crispy on the outside.People of japan eat this on special day like on DOYO NO USHI NO HI just to remove there fatigue from heat.Japanese markets sell this fish in grilled pre cooked form so it will become more convenient to enjoy this dish at home.

How to make unagi sauce:

Take a soucepan ,i am adding soya sauce ,brown sugar, honey,rice veniger,date syrup and some water in it. Turn on the flame and cook it with a whisk until its start becoming thick.We need a thick runny texture if it is not becoming thick then you can add a small amount of cornstarch to reach the consistency.After that turn off the flame and set aside.You can also make unagi sauce with sake and mirin in the replacement of brown sugar honey and dates but i love to make it this way.Trust me and you will get the exact taste.

Unagi fish :

Unagi is basically a fish and it is not mostly available in raw form specifically in japan there pre cooked versions are more easy to find,so i am also using store bought unagi precooked but i will broil it in the oven to get it cooked.Simply take out your unagi cut it in the half and place it on the oven tray.You can also cut small pieces but i am following the traditional way.

Broiling the unagi:

Take a brush and glaze the unagi sauce on the fish fillet. I have one cut in half and one whole, Glaze them properly on both sides pre heat the oven at 220 C and place the tray at the stage near to heat as we are going to broil it a method in which food is cooked for minimum time under high temperature.broil it for 8 minutes and take it out again glaze it with the sauce and cook for 2 minutes until sauce get bubles.. Now take it out it is ready to place it on the rice.

Cook the rice:

Take Japanese sticky rice for it if you have the rice cooker then you can use it but i am using simple pot for it. Take the rice about two cups and soak them overnight or 6 to 8 hours , now add them to the pot with water about 4 cups cook them by covering them because we need steam and after cooking for 20 minutes simply set them aside.

Assembling:

Assemble your bowl by adding the rice pour little amount of sauce on them place your unagi fish add some green onions for the garnish add a little amount of sansho spice for the kick. also sprinkle some seseme seeds and here you have it enjoy an amazing bowl of rice with your family.

Ingredients:

Unagi Sauce

  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tbsp date syrup or molasses
  • 1/4 cup water
  • 1 tsp cornstarch (optional, for thickening)

Unagi (Eel)

  • 1–2 pre-cooked unagi fillets (store-bought)

Rice

  • 2 cups Japanese sticky rice (glutinous rice)
  • 4 cups water

Garnish

  • Green onions (sliced)
  • Sesame seeds
  • Sansho pepper as required
