Fried chicken with boiled rice and amazing Katsu sauce and picked purple cabbage
What is Katsu curry:
Katsu curry is a comforting meal in Japanese cuisine.It was introduced by British in Japan in Meiji era,the word Katsu means breaded in this dish the chicken is coated or breaded with panko bread crumbs,eggs and flour to give you a crispy experience and the world curry comes from indian curry .This dish is very famous in Japan you can also find it in instant forms in supermarkets.

Things we need:
- 3 medium onions
- 1 carrot
- 30g ginger
- 5 garlic cloves
- 5 tbsp oil
- 1 apple
- 2 Star anise
- 1 cinnamon stick
- 1.5 tbsp curry powder
- 1 tsp garam masala
- 2 tsp turmeric
- 1 tsp black pepper
- 2 tsp salt
- 1 tsp red chilli powder
- 100g butter
- 75g plain flour
- 1 tbsp soy sauce
- 900ml chicken stock
- 2 tbsp honey
- 2 – 3 large chicken breasts
- Salt Black Pepper 200g
- Panko breadcrumbs
- Plain Flour as required
- 3 large eggs
- 2 tbsp water
- Oil for Shallow Frying
How to make it:
curry sauce:
For the curry sauce we will slice the onion first add in your oil in a pan with ginger garlic paste and cook a bit during whole process use stock for deglazing if needed.Now add carrot chopped and shredded apple for some sweetness now add in your spices and aromatics and cook.Now we will make a kind of roux for it at this step we will add flour and cook it after that add in your stock slowly,and cook until nice and even now blend the sauce and for extra smoothness pass it from a sifter.Here your sauce or curry is ready now move on to the next step.
For chicken:
We need simple seasoning for the Brest cut it into thin slices like stake shape,and season it well from both sides.Now simply take use breading technique coat them in flour then egg and then panko bread crumbs.And shallow fry them until nice golden and crispy.

For sides we can cook the rice in simple aromatics water like star anise ,cloves and cinnamon and picked cabbage also goes well with this dish.And that,s it your fantastic comforting food is ready to enjoy.

Tips:
Add extra vegetables like broccoli, spinach, or bell peppers for volume and nutrients.
Grill or bake the katsu instead of deep-frying to reduce fat.
Use brown rice or cauliflower rice for more fiber and fewer carbs.
Make your own curry roux with less sodium and no added sugars.
