Learn to make perfect bowl of chowder with seafood flavours in it served with amazing peace of bread.
What is a chowder:
chowder is basically a creamy soup which covers all the richness in it and cooked with seafood to give you a bowl of hearty dinner meal.So chowder originates from northeastern United States, particularly in regions like Massachusetts and Maine.But like other dishes it is also connected to french history.

I am making Clam chowder but we have many types of this dish as well like without potatoes and by using other seafood products.
Things we need:
- 1 large onion sliced
- 2 stalks of cellery
- 2 diced potatoes
- 3 to 4 garlic cloves
- 4 slice of lamb bacon
- 2 tablespoon butter
- 40 grams of all purpose flour
- 2 cans of chopped clam
- 360 ml of chicken stock
- 1 cup of dairy cream
- 1/2 cup milk
- salt to taste
- 1 teaspoon black pepper
- 1 bay leaf
- parsley for garnish
- a big bread to make bread bowl
How to make it:
Cuttings:
Take your chopping board carefully dice onions,celery and potatoes also mince the garlic cloves. If you are using steamed clam then chop them but i am using store bought chopped cans for it.
preparing fat:
We have to cook the veggies in the fat so i am cooking my bacon strips until all the fat comes out ,you can also use duck fat for it it will give extra flavour to dish now add in the butter in bacon fat and melt. So clam chowder is a one pot dish so we are doing all steps in one pot.
Frying vegetables:
so add in your vegetables and cook in the prepared fat until softens.Now for the creamy texture we are going to make roux first i am adding flour in the veggies mix until flour cooked now add all the juices present in the cans or your steamed water in the pot and cook this will give extra kick , we are not adding the chopped clams at this point it is preferable to cook them for the least time. now add in your stock and mix for 5 minutes.
Creamy sauce:
for the creaminess add milk in it and your seasoning along with your potatoes cook it on simmering until potatoes softens, now add your cream and clam at the end and cook for a minute.
Plating:
The soup must be slightly thick, creamy and that,s it now take your big round bread and make a big whole in it like a bowl. You can also serve it in a soup bowl i am pouring my soup in this bread bowl and garnishing it with some parsley, serve it with any type of bread you want if you are using a simple bowl.
