Mole Poblano an amazing chicken dish with fantastic mole sauce often served with rice.
What is mole poblano:
Mole poblano is basically a Mexican dish famous all over the world.One dish with lots of unique flavours collectively give you a comforting food.This dish was first made by nuns they want to show something different to there bishop that,s why they tried and invented this amazing dish and as the time passes it spread to all parts of world.Mexican people love to eat it at there functions or celebrations and many Mexican restaurants world wide serving this dish as there signature food.

What makes mole different? The unique sauce we will make a sauce with herbs , chillies,nuts,stock,chocolate and many other ingredients this sauce is time consuming to make but i am giving you guarantee that with its flavours all the hard work that went into it will be forgotten.Lets start it.
Things we need:
For sauce:
- 130 g chocolate disk
- A small piece of pilóncillo
- 3 cloves 4 all spice berries
- 1 tsp peppercorn
- 1/2 tsp cumin seeds
- 1/2 tsp thyme
- 1/2 tsp marjoram
- 1 inch cinnamon stick
- 1 tbsp sesame seeds
- 2 tbsp- sliced almonds, peanuts, raisins
- 1/2 bread
- 1 corn tortilla
- 1/2 cup Marie biscuits
- 1 small onion
- 1 Roma tomato
- 4 garlic cloves
- 1/2 plantain
- 8 New Mexico chilli pods
- 4 chile pasilla/ancho or
- 2 chile negro
- 1-2 Chipotle peppers
For stock:
- chicken 2 kg
- water for stock
- garlic 4 colves
- whole onion
- 3 bay leaves
- small bottle of orange juice about 250ml
Lets make it:
Make stock first:
Guys it is very easy to make stock add water in the saucepan add in your chicken,garlic,onion and bay leaves and cook it for a minute. Now skim all the impurities from the top and add in your orange juice cook for 15 minutes or until chicken become soft , now take out your chicken. Separate about 4 to 5 cups of stock for sauce.
Fry chicken:
This step is optional but i am just taking a fry pan adding in butter almost 1 tablespoon and just cooking my chicken until golden brown on both sides just for a little crispiness.
Main sauce:
So guys just take a pan and start roasting every thing. cook everything separately ,nuts ,spices, chillies, onions and tomatoes except chocolate and small piece of pilóncillo add them directly in the stock ,every thing roasted will be diped in the stock we seprated. Now just take a blender and blend it with 1/2 cup of water and now take a big pot Add your sauce cook for 2 minutes add in your chicken and cook for 5 minutes as all of the ingredients are cooked we just want to infuse sauce flavours in chicken.And that,s it plate it with a fresh plate of tomato rice or eat it with bread as per your choice and enjoy!
