First we have to know what basically a cassoulet it is a very comforting meat stew made in oven and stove for a long time. The freshness of herbs like thyme rosemary the richness of meat ,and healthy veggies and white beans with less spices in one pot gives you a very wholesome experience .

Cassoulet is a french dish .We can have it as dinner and lunch . We can serve it with a fresh bread like baguette as the bread can soak the sauce flavours into it . Heavy or starchy side dishes not go well with a cassoulet .The dish is named after the cassole, a traditional, wide clay pot with sloped sides. This pot promotes even slow cooking, allowing the beans and meat to develop deep, harmonious flavors.As it is a traditional dish so it is a heritage.French people love to have it or cook it its slow cooking process makes the flavours satisfying .

How to make a full of flavours pot of CASSOULET. Let me tell you in a easy way even beginners can enjoy the flavours of history.
Make the stock:
So guys we need almost four cups of freshly made chicken stock i am simply deboning the chicken and using the thigh parts for the stew and the bones for making my stock .Simply add your bones you can also use some chicken wings if you have ,add a litre of water or more in it add a half carrot cloves of garlic some aromatics like black peppercorns cinnamon stick etc turn on the flame and leave it for almost 45 minutes until the bones release all its juice .When its done set it aside .
how to prepare veggies:
Take the veggies. Some people use whole and discard but i am using chopped vegetables like i am chopping celery,shallots,and carrot take a pan add some butter in it add your vegetables cook them for 2 minutes now to deglaze them add a little amount of stock in it also add salt and pepper.Cook the veggies until they are soft and the stock vaporize compleatly and set aside.
White beans :
So white beans are the basic component of this recipe.You have to soak them overnight,so they can become soft as we required for the stew. after soacking overnight you have to cook them in the stew on the stove and in the over as well and that,s how they will become super soft and and ready to enjoy.Mash half of them to thick the stew and half of them remains as it is .
Meat preparations:
You can use any type of protein.like people use duck,chicken,beef,pork etc .But i am using lamb sausages and chicken thighs for it. I am simply adding black pepper on it taking a pan adding the olive oil few cloves of garlic rosemary and thyme fresh or dried any type you want to use ,adding my meat and fry it on high flame until it become golden brown on each side .
Collecting all of them in a pot:
So we are continuing from the meat after making it golden brown we will add our cooked vegetables in it our soaked white beans and almost three cups of stock until it dip all the ingredients ,dont use salt if you want to add you can use a pinch ,because meat also contains salts in it.Add some fresh parsley on it and cook on medium flame until boils , Add bread crumbs on its top to make it crunchy and attractive they will enhance its flavour .Pre heat your oven at 180 C take your pan and place it in it.You have to cook it for an hour or until it looks perfectly cooked, and enjoy your amazing meal .
Ingredients:
For the Chicken Stock:
- Chicken bones (from thighs or wings)
- 1 litre (or more) of water
- ½ carrot
- 2–3 cloves of garlic
- Black peppercorns 1 teaspoon
- 1 cinnamon stick
- Optional aromatics (e.g., bay leaf, thyme, etc.)
For the Vegetables:
- Celery (chopped) half cup
- Shallots (chopped) half cup
- Carrot (chopped) 1/4 cup
- Butter 2 tablespoon
- Salt as required
- Black pepper 1 teaspoon
- A splash of chicken stock (for deglazing)
For the White Beans:
- White beans (soaked overnight)
- Water (for soaking and cooking)
For the Meat:
- Chicken thighs (boneless) 3 to 4
- Lamb sausages (or any preferred meat) 2 to 3
- Olive oil 2 tablespoon
- Garlic cloves 3 to 4
- Fresh or dried rosemary 1 teaspoon
- Fresh or dried thyme 1 teaspoon
- Black pepper half teaspoon
For Assembling the Cassoulet:
- Cooked vegetables (from above)
- Cooked white beans
- 3 cups of chicken stock (from above)
- Fresh parsley (chopped)
- Bread crumbs (for topping)
