Spinach-Stuffed Chicken Roulade with Mushroom sauce

Welcome to Maha,s kitchen!Today, I’m sharing one of my favorite comfort meals that looks fancy but is actually pretty easy to make spinach-stuffed chicken with creamy mushroom sauce. It’s juicy, flavorful, and perfect for a cozy dinner at home or when you want to impress someone without too much effort. I hope you’ll enjoy cooking (and eating!) it as much as I do.

The Perfect Pair: Mushrooms and Spinach:

Mushrooms have a rich meaty flavour that makes a dish warm on the other hand spinich have a fresh slightly bitter taste which balances the richness of mushrooms .So musrooms and spinich go really good with each other when cooked .Here we are going to blanch our spinich so it will become soft and we will use mushrooms for the sauce so as the result they will collectively make a healthy and tasty dish .we can also use there perfect combo in making many other dishes as well like pastas soups and stir fries etc .

Let’s Get Prepping:

Stuffing the chicken :

We want 5 to 6 chicken brest as we are going to stuff the chicken so we are using the brest portion .Take the Brest and place a cling sheet on it now ham it with a meat hammer .Hammering the chicken helps it to cook more evenly and prevents it from staying rare or un cooked . Now take a brest and cut it with your knife make a cut on one side to open it like a pocket and repeat this process for all of them . Take a bowl add cream cheese ,mayo ,salt ,minced garlic,shredded mozzarella cheese and Parmesan cheese in it .Add water in a saucepan and cook on meduim flame you dont need to boil it now add in the washed spinich cook for 10 minutes until soft now take it out in a bowl of cold water .This process in called blanching now add this spinich into the cream cheese mixture and mix .Now its time for the fun part take you stuffing take a brest open its cut part and fill a generous amount of filling in it dont add a lot of it now take a toothpick and use it to seal the filling into the brest .

Cooking the brest :

First we have to take a pan add a little amount of olive oil in it now place your chicken brest in it and cook on medium flame .Change its side after 5 mins and cook on the other side we want it in a golden brown colour at this stage we are not cooking it completely.Now take it out and place the chicken on the oven tray and bake it for another 15 to 20 minutes in the preheat oven at 220 C or 425 F until properly cooked .

How to Make Creamy Mushroom Sauce:

For a perfect mushroom sauce we are using white button mushrooms slice them properly .Now chop a red onion and mince some garlic .Take a pan place it on a stove add a peace of butter in it and melt it .Now add the onion in it and cook, now add garlic and mushrooms in it . sprinkle some salt and pepper on it and some herbs like i am using mix herbs .Herbs can give it a perfect aroma .Now add your chicken stock in it and cook for 5 minutes now at this stage add heavy cream into it and mix . Cook it but dont overcook the sauce it should be runny as it will become more thick when it comes to room temperature.

Assembling the dish :

Lets assemble it i am not using any platter just using the same pan i am make the sauce . You can also use a fancy platter as i am making it just for my craving for something satisfying and tasty .So i am just Gently reheat the sauce over low heat, stirring occasionally until it’s warm and smooth and placing my baked chicken peaces on it spreading the sauce on them as well .Sprinkle some chopped green coriander on it for attractive look and enjoy .

Ingredients :

For the Stuffed Chicken:

  • 5–6 chicken breasts
  • Cling film (for pounding the chicken)
  • Cream cheese (about ½ to 1 cup, adjust to taste)
  • Mayonnaise (2–3 tablespoons)
  • Salt (to taste)
  • Minced garlic (1–2 tablespoon)
  • Shredded mozzarella cheese (½ cup)
  • Grated Parmesan cheese (2–3 tablespoons)
  • Fresh spinach (1 bunch or about 2 cups, washed)
  • Toothpicks (for sealing the chicken)
  • Olive oil (1–2 tablespoons, for pan-frying)

For Blanching Spinach:

  • Water (enough to boil spinach)
  • Ice water (for cooling after blanching)

For the Creamy Mushroom Sauce:

  • White button mushrooms (1 cups, sliced)
  • Red onion (1 small, finely chopped)
  • Minced garlic (1 tablespoon)
  • Butter (1 tablespoon)
  • Salt and black pepper (to taste)
  • Mixed dried herbs (like oregano, thyme, or Italian seasoning – 1 teaspoon)
  • Chicken stock ( 1 cup)
  • Heavy cream (½ cup or as needed)
